
Crispy Oyster Mushroom Sandwich
The ultimate mushroom "steak" sandwich, inspired by the wonderful Happy Pear. Crispy and juicy, what's not to love?
Works best with: any variety of oyster mushroom
Serves: 2
Ingredients
- 200g mushrooms, any variety of oyster mushrooms
- 1 tbsp soy sauce or tamari
- 1 red or white onion
- 1 bell pepper, any colour
- Bread, preferably sourdough or baguette
- Mayonnaise, to serve
Method
- Slice, then fry off the onion & pepper until they're starting to brown, approx 5-7 mins. Remove from the pan into a covered bowl, to keep warm
- Rip or slice the mushrooms into strips about 5cm long
- Fry the mushrooms over a high heat for 3-4 mins - don't stir too much
- Once the mushrooms are starting to soften, put an empty pot, frying pan or pan lid over the mushrooms to weight them down - this will help them char
- After 2-3 mins, remove the pot / frying pan / lid, and add the soy sauce / tamari to the pan, stirring to ensure all the mushrooms are coated
- Get some mayo on your bread, add the onions, peppers & mushrooms, add a good crack of black pepper and serve
