The Oyster mushroom is well known for its excellence as a culinary fungi. Widely cultivated by professional and amateur mycologists alike. Regularly spotted in the local woodland and your local farmers market in equal measure. However, this dependable ‘fungi next door’ image hides a powerful secret.

Oyster mushrooms naturally produce Lovastatin, an organic compound that when marketed pharmaceutically under various brand names is used to lower blood cholesterol. They are also rich in the amino acid ergothioneine, which makes P. ostreatus a potentially powerful antioxidant and anti-inflammatory. This amazing mushroom packs high levels of β-glucans, ergosterol and other metabolites including polysaccharides, which could act as an anticoagulant, helping the body to reduce the risk of stroke and heart attack. In addition, their flavonoid & phenolic content demonstrate potential antimicrobial action, particularly antifungal and antibacterial effects, which could help the body fight infection.

Potential Benefits

Rehydration Steps

To rehydrate, pop your dried Oyster Mushrooms into a bowl & fully cover with water. Place a plate or pan lid on top to keep them submerged.

For best results use room temperature water (takes 1-2 hours), or reduce the time to 20 mins using hot (not boiling) water, but you may lose some flavour. Drain, gently squeeze out any excess water, and cook just like fresh.
